Sea Urchins

straight from the fishing boat at the Fishermen's wharf in Steveston .... sea otters love them, - some people do too, but I have never tried them :-))

Sea urchins are the class Echinoidea within the echinoderms. Approximately 950 species live on the seabed, inhabiting all oceans and depth zones. (a very short excerpt from Wikipedia).

I checked how to prepare them:
Open: Carefully cut a circle around the opening (the base) with kitchen scissors or a sea urchin opener and remove the top part of the shell. Remove: Carefully lift out the 5 bright orange pieces of roe (the sea urchin roe) with a spoon. Clean: Briefly rinse the roe in cold salt water to remove any remaining shell or internal organs.
