Farmers Cheese #1 - Bart and Floortje on their pasture #1
Just by coincidence I discovered a farm in North Holland making traditional farmers cheese. I decided to make a photo reportage to introduce you to the special farm...
The Cheese Farm “De Franschman” near Bergen North Holland
The farm „De Franschman“ (the French man) is located at the southern road from Bergen to Egmond. The name dates back to 1799 when a French soldier was killed nearby and found later giving the farm its name. Since decades the family “Veldt” followed the old tradition of producing cheese and at the time being the younger generation, Bart Veldt and Floortje Dowgwillo, have now taken over the inheritance.
Three times a week they produce the “Bergener Cheese”, a cheese of highest quality from the raw milk from their 40 cows. The raw milk is the secret of the outstanding taste in comparison to industrial cheese. The cheese can mature in the stockroom from young cheese (4 weeks old), to matured cheese (4 months old) or to old cheese (older than 9 months). Beside this, different tastes are available e.g. caraway, herbs, onion with garlic and many more.
