The Fungi World (271) : Velvet Shank

Velvet Shank is one of the few fungi that likes cold weather.
It can easily survive frost and as a consequence can be found (with some luck) all winter long.
Grows always in clusters.

This fungus is widely cultivated in east-Asia under the name Enokitake and is a popular ingredient in soups and salades in the Chinese, Japanese and Korean cuisine.
Because Enokitake is cultivated in complete darkness, it has, in contrast to the wild form, no colour but is pale white.
